3.5 lbs. chicken Step 1:  PREP:  Mix buttermilk marinade in Ziplock bag, put in chicken and massage to coat evenly.  Press out excess air, seal and refrigerate 12-24 hours turning once or twice.  
Buttermilk marinade  
1 cup buttermilk  
1 tbsp kosher salt Step 2:  Mix together breading and KFC seasoning in a mixing bowl with lid.  Take 2-3 chicken pieces and place in bowl, close lid, and shake aggressively.     YIELD

2 1/4 cups all purpose flour Step 3:  preheat oil to 350 and maintain the temperature as best as you can.  Place chicken in oil and cook until internal temp reaches 165.    
3/4 cups corn starch  
KFC Seasoning  
  2 tsp kosher salt    
3/4 tsp celery salt  
Plate and sliverware
    1 1/2 tbsp black pepper  
1 1/2 paprika    
    1/2 tsp cayenne pepper  
1 1/2 tsp onion powder  
    3 tsp garlic powder    
1 tsp mustard powder  
    1/2 tsp ginger powder  
1 1/2 dried thyme
