Step 1: In a large skillet heat 1 tbsp oil, add
chicken, season with salt and pepper, and sear until golden. At the same time, quarter potatoes and
place in crock pot with remaining oil, butter, garlic, thyme, and parmesan. |

2lb chicken thighs or breasts |

1 tsp kosher salt |

1 tsp black pepper |
Step 2: Add chicken when cooked and mix well. Cook on high for 4 hours or low for 8 hours
until potatoes are tender and chicken is fully cooked. Top with more parmesan and let set for 10
min. |
