Mexican Rice Casserole Casserole  
   
INGREDIENTS DIRECTIONS     COOK TIME
       
1 red onion, diced Step 1:  Warm up the oil in a large skillet over medium heat, add the onion, then spices and stir together.  Cook 6 min.  Add bell pepper, green chilis, beans, corn, salsa and cooked rice and stir until well-combined.  Cook for another 8 min.  
1 tbsp olive oil  
2 tsp cumin  
1 tsp chili powder Step 2:  Set oven to broil then place cooked contents in cake pan topping with shredded cheese.  Place the pan in the oven and cook for 3-4 minutes until the cheese is golden and bubbly.   YIELD
1 tsp paprika  
1/2 tsp kosher salt  
1 tsp oregano    
1 bell pepper, diced  
4 oz diced green chilies  
  1 can corn    
15 oz can black beans  
Plate and sliverware
    12 oz salsa  
1 1/2 cups brown rice    
    1/2 cup shredded Monterey Jack cheese  
1/4 cup shredded cheddar cheese
