Recipe: Stuffed Bell Peppers

Stuffed Bell Peppers Main Course  
   
INGREDIENTS DIRECTIONS     COOK TIME
       
4 bell peppers Step 1:  Cook meat with onion and garlic until no pink remains.  Heat bag of cauliflower rice and mix with taco seasoning, rotel, beef broth and cooked meat and mix well.  Bring mixture to a boil, cover and simmer for 10 min or until it is thick.  
1 lb. ground beef or turkey  
1/4 cup onions, diced  
1 can rotel Step 2:  Place a pinch of shredded cheese into the bottom of each pepper.  Scoop the beef mixture into each pepper topping with more cheese on top.  Place each bell pepper in cake pan and bake for 25 min at 350 degrees.   YIELD
2 tsp garlic, minced  
2 tbsp taco seasoning  
1 can beef broth    
1 bag riced cauliflower  
2 cups shredded cheddar cheese
