Recipe: BBQ Chicken Sweet Potato

4 cooked sweet potatoes Step 1:  Rinse, scrub, and pierce each potato 5-6 times with fork.  Drizzle each swet potato with some olive oil, salt, and pepper.  Next, wrap each potato in aluminum foil and bake them in the oven for 45-60 minutes at 400 degrees.  
2 tbsp olive oil  
1 lb. chicken breasts or thighs pounded thin  
1/2 tsp kosher salt Step 2:  At the same time, in a large skillet heat olive oil and chicken.  Cover with lid and cook for 10-12 min, flipping chicken halfway through.   YIELD
1/4 tsp black pepper  
3/4 cup BBQ sauce  
1/2 red onion, diced Step 3:  Once chicken is completely cooked, shred with a fork and add BBQ sauce.  Stir until combined.  Servie with diced onion, salt, pepper, and cheese.
