8 oz ground turkey Step 1:  Preheat oven to 400 degrees and line baking sheet with parchment paper.  Cook turkey in skillet over medium-high heat with onion, garlic, chili powder, oregano and cumin.  Cook for about 6 min then stir in the tomato sauce and chilis.  Bring to a boil then reduce heat and simmer uncovered for 5 min.  
1 onion, diced  
2 tbsp garlic, minced  
2 tsp chili powder Step 2:  Spoon about 1/2 cup of the filling into the center of each tortilla.  Fold in sides, then roll to enclose the filling.  Place chimichangas seam-side down on the baking sheet.  Lightly cover the tops of the tortillas with butter or cooking spray and bake for about 20 min or until golden brown.   YIELD
1 tsp oregano  
1/2 tsp cumin  
8 oz can tomato sauce    
2 tbsp green chilies  
1/3 cup shredded cheddar cheese  
  4 8 in flour tortillas
