Tex Mex Chicken and Beans Crockpot  
   
INGREDIENTS DIRECTIONS     COOK TIME
       
1 can pinto beans, rinsed Step 1:  In crock pot, stir together beans, salsa, chiles, flour, water, onion and bell pepper.  Cover and cook on low heat for 4 hours.  Season chicken with salt and pepper; arrange on top of bean mixture, add another cup of water and cook on low for 4 more hours.  
16 oz jar salsa  
2 tbsp chopped canned chipotle in adobo sauce  
2 tbsp flour Step 2:  Shred chicken and stir.  Serve over brown rice or inside flour tortillas to make tacos.   YIELD
1 red onion, diced  
1 bell pepper, chopped  
1/4 tsp salt    
1/4 tsp black pepper  
1 1/2 lb. chicken breast or thigh  
  1 cup water
