Taco Cauliflower Rice Casserole Casserole  
   
INGREDIENTS DIRECTIONS     COOK TIME
       
1 tbsp olive oil Step 1:  Ad oil to large pan or skillet on medium-high heat, add cauliflower rice, cook until tender, drain and place to the side.  In the same pan, add garlic, onion and beef cooking until browned and drain  
6 cups cauliflower rice  
1 tbsp garlic, minced  
1/2 onion, diced Step 2:  Add taco seasoning to beef, stir in black beans, 1/4 cup water and diced tomatoes.  Stir and cook on medium heat util evenly mixed and sauce has thickened.  Add cauliflower rice, cook on high for 5 min then drain.   YIELD
1 1/2 lb. ground beef  
2 tbsp taco seasoning  
1/4 cup water Step 3:  Add mixture into a 9 x 12 casserole dish.  Sprinkle cheese on top and bake at 350 for 10 min until cheese is melted.  Top with avocado when ready.  
14 oz diced tomatoes  
1 cup canned black beans, drained and rinsed  
  1 cup shredded cheddar cheese    
1/2 avocado
