Recipe: Vegetable Soup

INGREDIENTS DIRECTIONS     COOK TIME
       
1 tsp olive oil Step 1:  In large pot, heat olive oil over medium heat, then add onion and garlic and cook for 3 min.  Add the cabbage, carrots, and green beans.  Cook for an additional 5 min.  
1 onion, diced  
1 tbsp garlic, minced  
4 cups cabbage, chopped Step 2:  Stir in bell peppers, cauliflower, undrained tomatoes, broth, tomato paste, and seasonings.  Bring to a boil over medium-high heat then reduce to a simmer and cook for 8-10 min.  Add zucchini, simmer for an additional 5 minutes or until softened.   YIELD
1 cup carrots, diced  
1 cup green beans  
2 bell peppers, chopped    
2 cups cauliflower or broccoli  
28 oz diced tomatoes, with juice  
  6 cups beef broth    
2 tbsp tomato paste  
Plate and sliverware
    1/2 tsp thyme  
1/2 tsp basil    
    1/4 tsp kosher salt  
1/4 tsp black pepper  
    2 cups zucchini, sliced
