Step 1: In large pot, heat olive oil over medium
heat, then add onion and garlic and cook for 3 min. Add the cabbage, carrots, and green
beans. Cook for an additional 5 min. |

Step 2: Stir in bell peppers, cauliflower,
undrained tomatoes, broth, tomato paste, and seasonings. Bring to a boil over medium-high heat then
reduce to a simmer and cook for 8-10 min.
Add zucchini, simmer for an additional 5 minutes or until softened. |
